Super Green Smoothie

My dietary choices don’t always reflect the perfect healthy vegan that I strive to be. In fact, this weekend I discovered Daiya mozzarella, and it was Grilled Cheese Sandwich City at my house. Needless to say, this momentary lapse has left me feeling bloated, gassy, and a little backed up! So it’s my Super Green Smoothie to the rescue!

I like to whip one of these bad boys up every day to keep mine and baby’s body nourished. Don’t be thrown off by some of the ingredients, the flavour is very tangy and sweet.

Blend the following ingredients until purified (makes about 1 litre):

  • 2 Granny Smith apples
  • 1/3 English cucumber
  • 1/4 Avocado
  • 1″ Cube of fresh ginger
  • Fresh squeezed juice from 1/2 a lime
  • 2-3 Kale leaves, without the stem
  • 1 Handful of spinach
  • 2-3 Romaine lettuce leaves
  • 1-1 1/2 cups water
